	Der Name der Brauerei geht auf den Paulanerorden, der von Franz von Paola gegründet wurde, zurück. Bereits seit 1634 brauten die Mönche Bier für den Eigenbedarf. An Festtagen wurde das Paulanerbier auch öffentlich ausgeschenkt. 1886 übernahm die Gebrüder Schmederer Aktienbrauerei die Brauerei. Die Gesellschaft firmierte aber 1899 als Paulaner-Salvator-Brauerei und nach der 1928 erfolgten Fusion mit der Gebrüder Thomas Bierbrauerei in München als Aktiengesellschaft Paulanerbräu Salvatorbrauerei und Thomasbräu. 1994 erfolgte die Umwandlung in die Paulaner Brauerei AG, aus der 1999 die Paulaner GmbH und Co. KG hervorging. Diese fusionierte 2017 mit der Brau Holding International GmbH & Co. KGaA. Die Paulaner Brauerei war zuvor je zur Hälfte im Besitz der Brauholding International und der Schörghuber Unternehmensgruppe.
